- 1 pie crust
- 4 large eggs
- 1 cup milk or cream
- 1 cup grated cheese
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1 small onion, chopped
- 1 cup spinach
- 2 tablespoons olive oil
- Salt and black pepper
- Pinch of oregano
Instructions
- Preheat oven to 180°C (350°F).
- Sauté onion in olive oil until soft.
- Add zucchini and bell pepper, cook until tender.
- Add spinach and cook until wilted.
- Whisk eggs with milk, salt, pepper, and oregano.
- Place crust in baking dish.
- Add cooked vegetables and cheese.
- Pour egg mixture over filling.
- Bake for 35–40 minutes until set and golden.
- Cool slightly before slicing and serving.
Notes
Always sauté vegetables first to remove moisture. Let the quiche rest before slicing. You can mix different cheeses or vegetables based on what you have at home.
