Description

Simple roasted vegetables made with fresh ingredients, olive oil, and herbs. A healthy, easy, and flavorful dish perfect for any meal.


Ingredients

Scale
  • 2 carrots, sliced
  • 2 zucchinis, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into wedges
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Wash and chop vegetables evenly.
  3. Place in a bowl and add olive oil, garlic, and spices.
  4. Toss well to coat.
  5. Spread on a baking tray.
  6. Roast for 25–30 minutes.
  7. Stir halfway through cooking.
  8. Remove when golden and tender.
  9. Serve warm.

Notes

Use seasonal vegetables for best flavor. Do not overcrowd the tray. Store leftovers in the fridge and reheat in the oven.
