- 1 1/4 cups all-purpose flour
- 1/2 cup cold unsalted butter
- 3–4 tbsp cold water
- 150g bacon, diced
- 1 small onion, chopped
- 3 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 cup grated Gruyère cheese
- 1/4 tsp nutmeg
- Salt and pepper
Instructions
- Prepare and chill pastry dough.
- Press dough into muffin tin.
- Cook bacon and onion.
- Whisk eggs, cream, milk, and seasoning.
- Fill shells with bacon, cheese, and custard.
- Bake at 180°C for 20–25 minutes.
Notes
Use heavy cream for rich texture. Do not overfill. Store refrigerated up to 3 days or freeze up to 2 months.
