Description

Ingredients

  • 4 chicken breasts or thighs
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup pine nuts
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Juice of 1/2 lemon
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken with spices.
  2. Heat olive oil and cook chicken until golden.
  3. Remove chicken and sauté onion.
  4. Add garlic and tomatoes.
  5. Return chicken to pan.
  6. Add lemon juice and simmer until cooked through.
  7. Toast pine nuts separately.
  8. Sprinkle pine nuts and garnish with parsley before serving.
