Ingredients
- 3 medium zucchinis, grated
- 1 teaspoon salt
- 3 eggs
- 1/2 cup olive oil
- 1 cup milk
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 cup crumbled feta cheese
- 1/2 cup grated cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 180°C (350°F) and grease a baking dish.
- Grate the zucchinis, sprinkle with salt, and let sit for 10 minutes.
- Squeeze out all excess liquid using a clean cloth.
- In a large bowl, whisk eggs, olive oil, and milk until smooth.
- Add flour, baking powder, black pepper, oregano, and thyme, then mix gently.
- Fold in the squeezed zucchini, feta cheese, grated cheese, and parsley.
- Pour the batter into the prepared dish and smooth the top.
- Bake for 40–45 minutes until golden and cooked through.
- Let cool slightly before slicing and serving.
Notes
Make sure to squeeze the zucchini very well to avoid excess moisture. You can substitute feta with ricotta or add herbs like dill or green onions for extra flavor. Store leftovers in the fridge for up to 4 days or freeze individual slices for later.
