- 1 1/2 cups all-purpose flour
- 2 1/4 teaspoons active dry yeast
- 1 1/2 teaspoons salt
- 1 teaspoon sugar
- 1 1/2 cups warm water

- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Fresh rosemary (optional)

Instructions
- Dissolve yeast and sugar in warm water and let sit until foamy.
- Combine whole wheat flour, all-purpose flour, and salt.
- Add yeast mixture and olive oil to the flour mixture.
- Knead dough for 8–10 minutes until smooth.
- Place in oiled bowl and let rise until doubled, about 1 hour.
- Press dough into a greased baking pan.
- Let rest 20–30 minutes.
- Dimple the surface with fingertips and drizzle with olive oil.
- Sprinkle herbs and flaky salt.
- Bake at 200°C (400°F) for 20–25 minutes until golden.
