Description

This warm goat cheese salad combines creamy baked goat cheese with fresh greens, cherry tomatoes, red onion, toasted walnuts, and a sweet honey mustard balsamic dressing. It’s elegant, simple, and perfect for a light lunch or dinner.


Ingredients

  • 4 cups mixed greens
  • 225g goat cheese log
  • 1 cup cherry tomatoes
  • 1/2 red onion
  • 1/2 cup walnuts
  • 2 tbsp olive oil
  • 3 tbsp olive oil (dressing)
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp balsamic vinegar
  • Salt and black pepper

Instructions

  1. Preheat oven to 200°C.
  2. Slice goat cheese and place on baking tray.
  3. Drizzle with olive oil and bake for 8–10 minutes.
  4. Prepare greens, tomatoes, and onion in a bowl.
  5. Toast walnuts in a dry pan until golden.
  6. Whisk dressing ingredients until smooth.
  7. Top salad with warm goat cheese.
  8. Drizzle dressing and serve immediately.

Notes

Serve immediately for best texture. You can add pears or apples for sweetness. Walnuts can be replaced with pecans. Adjust honey and mustard in dressing based on taste preference.
