Description
Experience the authentic taste of New England with these dense, cake-style apple cider doughnuts. By reducing fresh cider to a concentrated syrup, we pack every bite with intense apple flavor. These treats are fried until golden and finished with a classic cinnamon-sugar coating, resulting in a perfectly tender interior and a crisp, spiced exterior. Perfect for autumn mornings or any time you crave a traditional, comforting homemade orchard treat.
Ingredients
2 cups apple cider (reduced to 1/2 cup)
3.5 cups all-purpose flour
2 tsp baking powder
1.5 tbsp ground cinnamon (divided)
0.5 tsp nutmeg (freshly grated)
0.5 cup buttermilk (or plain yogurt)
4 tbsp unsalted butter (melted and cooled)
1 cup granulated sugar (divided)
1/2 tsp salt
2 large eggs
Neutral oil for frying
Instructions
Simmer the apple cider in a saucepan over medium heat until it reduces to 1/2 cup, then cool completely.
Whisk together flour, baking powder, salt, 1/2 tablespoon of cinnamon, and nutmeg in a large bowl.
In a separate container, whisk the eggs, sugar, melted butter, and cooled cider reduction.
Fold the wet ingredients into the dry mixture until a soft, sticky dough forms.
Cover and chill the dough in the refrigerator for at least 60 minutes to firm the fats.
Heat neutral oil in a deep fryer or heavy pot to 350°F.
Roll dough on a floured surface, cut into doughnut shapes, and fry for approximately 2-3 minutes per side until golden brown.
Drain briefly on a wire rack and toss while warm in a mixture of remaining cinnamon and sugar.
Notes
Ensure the cider reduction is completely cool before mixing to prevent the eggs from curdling. If the dough is too sticky to handle, dust your hands and the rolling surface with extra flour. Use a neutral oil with a high smoke point like canola or grapeseed oil for frying.
