2 tablespoons olive oil
1 medium yellow onion, diced small
3 cloves garlic, minced
24 oz high-quality marinara sauce
4 cups low-sodium vegetable broth
8 oz lasagna noodles, broken into 2-inch pieces
3 cups fresh spinach, chopped coarsely
1 cup whole milk ricotta cheese


Instructions

Heat two tablespoons of olive oil in a large heavy-bottomed pot over medium heat.
