Ingredients
2 medium zucchini, sliced into 1/4 inch rounds
2 large bell peppers, diced
10 oz fresh spinach, chopped
32 oz high-quality marinara sauce
15 oz full-fat ricotta cheese
3 cups shredded mozzarella cheese, divided
1/2 cup finely grated parmesan cheese
12–15 lasagna noodles
1 tbsp dried oregano
Olive oil and salt for roasting
Instructions
Preheat your oven to 400°F (200°C).
Toss the zucchini and peppers with olive oil and salt on a large baking sheet and roast for 20 minutes until tender and caramelized.
Reduce oven temperature to 375°F (190°C) for baking the lasagna.
Spread one cup of marinara sauce across the bottom of a 9×13 inch baking dish.
Layer three noodles over the sauce to cover the base.
Spread a layer of ricotta cheese over the noodles.
Distribute a portion of the roasted vegetables and fresh spinach over the ricotta layer.
Sprinkle a handful of mozzarella cheese over the vegetables.
Repeat the layers until all ingredients are used, finishing with a final layer of sauce, mozzarella, and parmesan cheese.
Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until bubbly and golden.
Notes
Ensure the vegetables are well-drained after roasting to keep the lasagna firm. Use no-boil noodles if you prefer, but follow package directions regarding extra sauce usage. Leftovers can be stored in the refrigerator for up to 4 days and reheat perfectly in the oven.
