Ingredients
4 (6 oz) chicken breasts
1.5 cups breadcrumbs
1.5 cups grated Parmesan
2 large eggs or 1/4 oz chia
2 cups marinara sauce
1 tbsp olive oil
Instructions
Pat chicken dry with paper towels
Set up breading station: one bowl with flour, one with beaten eggs, one with breadcrumbs
Dip each breast in flour, shake off excess
Dampen chicken slightly with water, then coat in eggs
Press firmly into breadcrumbs to fully cover
Place chicken on wire rack over baking sheet
Chill in refrigerator for 30 minutes
Preheat oven to 400°F (205°C)
