Ingredients

2 lbs Boneless, skinless chicken breasts, sliced into cutlets
1/2 cup Oil-packed sun-dried tomatoes, chopped
3 cups Fresh spinach, stems removed
1 cup Heavy cream
1/2 cup Low-sodium chicken stock
4 cloves Garlic, minced finely
1/2 cup Freshly grated Parmesan cheese
2 tbsp Extra virgin olive oil
Kosher salt and black pepper to taste


Instructions

Season the chicken breasts generously with kosher salt and black pepper on both sides.
Heat olive oil in a large skillet over medium-high heat until the oil ripples.
Sear chicken for 5 to 6 minutes per side until golden brown and cooked through.
Remove chicken from the pan and set aside on a plate, covering loosely with foil.
Lower the heat to medium and add the minced garlic to the same pan, sautéing for 30 seconds until fragrant.
Add the sun-dried tomatoes and chicken stock to the pan, scraping up any browned bits.
Stir in the heavy cream and simmer until the sauce thickens slightly.
Add the fresh spinach and cook until wilted.
Stir in the Parmesan cheese until melted and the sauce is smooth.
Return the chicken to the pan to coat with the sauce and serve immediately.

Notes

Ensure you scrape the brown bits (fond) from the pan when adding the chicken stock for maximum flavor. For a lighter version, you may substitute the heavy cream with full-fat coconut milk.
