Description

Indulge in a classic Turtle Cheesecake featuring a velvety smooth cream cheese base, toasted pecans, buttery caramel, and a decadent semi-sweet chocolate ganache. This professional-grade dessert is designed with a water-bath method to ensure a crack-free, silky consistency. Perfect for celebrations, the balanced sweetness makes every bite a sophisticated experience.

Ingredients

Scale

32 oz full-fat cream cheese, room temperature
1.5 cups granulated sugar
1 cup full-fat sour cream
4 large eggs, room temperature
1.5 cups pecans, toasted and chopped
1 cup caramel sauce
1 cup semi-sweet chocolate chips
2 cups graham cracker crumbs
0.5 cup butter, melted
1 tsp salt
1 tsp vanilla extract

Instructions

Preheat oven to 325 degrees Fahrenheit.
Combine graham cracker crumbs, melted butter, and a pinch of salt; press into a 9-inch springform pan.
Bake the crust for 10 minutes, then set aside to cool.
Beat cream cheese and sugar in a large bowl until completely smooth.
Mix in the sour cream and vanilla extract on medium speed.
Add eggs one at a time, mixing gently until just combined.
Pour the filling over the prepared crust.
Place the pan in a water bath and bake for 75 minutes.
Turn off the oven and let the cheesecake sit inside with the door cracked for an hour.
Chill in the refrigerator for at least 6 hours before topping with caramel, pecans, and melted chocolate.

Notes

Use a water bath (wrapping the pan in foil and placing it in a larger roasting pan with hot water) to prevent cracks. Room temperature ingredients are essential for a smooth, lump-free batter. Store in the refrigerator for up to 5 days.
