Description

Ingredients

  • 3 eggs
  • 1/2 cup olive oil
  • 3/4 cup milk

  • 2 medium tomatoes, diced
  • 1 small onion, finely chopped

Instructions

  1. Preheat oven to 180°C.
  2. Grease a baking pan.
  3. Mix flour, baking powder, salt, and pepper.
  4. Beat eggs in another bowl.
  5. Add olive oil and milk to eggs.
  6. Combine wet and dry ingredients.
  7. Fold in tomatoes, onion, cheese, and herbs.
  8. Pour batter into pan.
  9. Bake for 40–45 minutes until golden.
  10. Cool slightly before serving.

Notes

Drain tomatoes well to avoid excess moisture. You can substitute cheese based on preference. Store leftovers in the fridge for up to 3 days and reheat gently.
