Ingredients
Chicken thighs (1.25 kg / 4 lbs), coarse salt (2 tsp), black pepper (1 tsp), lemon zest (1 tbsp), garlic powder (2 tsp), honey (3 tbsp), yellow mustard (4 tbsp), apple cider vinegar (2 tbsp)
Instructions
Combine salt, pepper, lemon zest, and garlic powder; press into chicken thighs.
Whisk honey, mustard, and vinegar until smooth; reserve 2 tbsp for basting.
Preheat grill to 220°C (425°F) and oil grates.
Place chicken skin-side down; sear 3-4 minutes until golden. Flip, cook 2 minutes.
Glaze with remaining sauce, then move to indirect heat; cook 10-15 minutes, basting occasionally.
Notes
Use bone-in thighs for richer flavor and skin-on to retain moisture.
Dijon mustard or mayonnaise can substitute yellow mustard.
Store leftovers in an airtight container for up to 3 days.
