Description

This Stuffed Chicken with Pine Nuts is a comforting and flavorful dish made with juicy chicken breasts filled with a creamy spinach and cheese mixture, finished with toasted pine nuts for a delicate crunch. It’s simple enough for everyday cooking yet elegant enough for special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/3 cup pine nuts
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 180°C.
  2. Toast pine nuts in a dry pan until golden.
  3. Sauté garlic in olive oil, then add spinach and cook until wilted.
  4. Mix spinach, pine nuts, cream cheese, Parmesan, oregano, salt, and pepper.
  5. Cut a pocket into each chicken breast.
  6. Stuff each breast with the filling.
  7. Sear chicken in a pan until golden on both sides.
  8. Transfer to oven and bake for 25–30 minutes until fully cooked.

Notes

Do not overstuff the chicken to ensure even cooking. You can substitute spinach with kale or add sun-dried tomatoes for extra flavor. Store leftovers in the fridge for up to 3 days.
