- 4 boneless, skinless chicken breasts
- 1/3 cup pine nuts
- 1 cup fresh spinach, chopped
- 2 cloves garlic, minced
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 180°C.
- Toast pine nuts in a dry pan until golden.
- Sauté garlic in olive oil, then add spinach and cook until wilted.
- Mix spinach, pine nuts, cream cheese, Parmesan, oregano, salt, and pepper.
- Cut a pocket into each chicken breast.
- Stuff each breast with the filling.
- Sear chicken in a pan until golden on both sides.
- Transfer to oven and bake for 25–30 minutes until fully cooked.
Notes
Do not overstuff the chicken to ensure even cooking. You can substitute spinach with kale or add sun-dried tomatoes for extra flavor. Store leftovers in the fridge for up to 3 days.
