Ingredients
1 cup pumpkin puree (solid pack)
2 cups all-purpose flour
1.5 cups brown sugar
0.5 cup butter (chilled and cubed)
2 tbsp warm spices (cinnamon, nutmeg, cloves mix)
2 large eggs (room temperature)
1 tsp baking soda
1/2 cup vegetable oil
1 pinch salt
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Grease a 9×5 inch loaf pan thoroughly and line the long sides with parchment paper.
Whisk the flour, sugar, baking soda, and warm spices in a large mixing bowl.
In a separate bowl, whisk together the pumpkin puree, vegetable oil, and eggs until smooth.
Fold the wet ingredients into the dry mixture until just barely combined.
In a small bowl, rub the cold cubed butter into a mixture of flour and cinnamon to create a coarse streusel.
Pour the batter into the prepared loaf pan.
Spread the streusel topping evenly over the surface of the batter.
Bake for 55 to 65 minutes until a skewer inserted in the center comes out clean.
Allow to cool before slicing.
Notes
Ensure your eggs are at room temperature to help the batter emulsify correctly. Do not overmix the batter to keep the crumb tender. The bread stays fresh for up to 3 days when stored in an airtight container.
