Description

This Strawberry Tart with Custard features a buttery homemade crust, silky vanilla pastry cream, and fresh strawberries glazed to perfection. This elegant yet simple dessert is perfect for spring gatherings and family celebrations.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 23 tablespoons cold water
  • Pinch of salt
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 3 egg yolks
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 2 cups fresh strawberries
  • 2 tablespoons apricot jam
  • 1 tablespoon water

Instructions

  1. Prepare tart dough and chill for 30 minutes.
  2. Roll out dough and place in tart pan.
  3. Blind bake at 180°C for 15 minutes, then 10 more minutes uncovered.
  4. Heat milk in saucepan.
  5. Whisk egg yolks, sugar, and cornstarch.
  6. Combine milk and egg mixture and cook until thick.
  7. Stir in vanilla and butter and cool completely.
  8. Fill tart shell with custard.
  9. Arrange strawberries on top.
  10. Brush with warm apricot glaze and chill before serving.

Notes

For best results, use ripe seasonal strawberries. Always strain the custard for a silky finish. Store covered in the refrigerator for up to 3 days. Do not freeze.
