- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup powdered sugar
- 1 egg yolk
- 2–3 tablespoons cold water
- Pinch of salt
- 2 cups whole milk
- 1/2 cup granulated sugar
- 3 egg yolks
- 3 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- 2 cups fresh strawberries
- 2 tablespoons apricot jam
- 1 tablespoon water
Instructions
- Prepare tart dough and chill for 30 minutes.
- Roll out dough and place in tart pan.
- Blind bake at 180°C for 15 minutes, then 10 more minutes uncovered.
- Heat milk in saucepan.
- Whisk egg yolks, sugar, and cornstarch.
- Combine milk and egg mixture and cook until thick.
- Stir in vanilla and butter and cool completely.
- Fill tart shell with custard.
- Arrange strawberries on top.
- Brush with warm apricot glaze and chill before serving.
Notes
For best results, use ripe seasonal strawberries. Always strain the custard for a silky finish. Store covered in the refrigerator for up to 3 days. Do not freeze.
