A fresh and elegant strawberry tart made with a buttery crust, smooth vanilla cream, and juicy strawberries. This easy homemade dessert is perfect for spring and special occasions.

- 1 ½ cups all-purpose flour
- ½ cup cold butter
- ¼ cup sugar
- 1 egg
- 1–2 tbsp cold water
- 1 ½ cups milk
- 3 egg yolks
- ½ cup sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 2 cups fresh strawberries
- 2 tbsp apricot jam
Instructions
- Mix flour and sugar, then rub in butter.
- Add egg and water to form dough.
- Chill dough for 30 minutes.
- Roll out and place in tart pan.
- Bake at 180°C for 20 minutes.
- Heat milk until warm.
- Whisk yolks, sugar, and cornstarch.
- Combine with milk and cook until thick.
- Add vanilla and cool.
- Fill crust with cream.
- Arrange strawberries on top.
- Brush with jam and chill before serving.
Notes
Keep butter cold for best crust. Chill before serving for best texture. You can replace strawberries with other fruits if desired. Store in refrigerator up to 2 days.
