Description

This Strawberry Cream Tart features a buttery homemade crust filled with silky vanilla custard and topped with fresh glazed strawberries. It is an elegant yet simple dessert perfect for spring and summer gatherings.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour (190g)
  • 1/2 cup cold unsalted butter (115g)
  • 1/4 cup powdered sugar (30g)
  • 1 egg yolk
  • 23 tablespoons cold water
  • 2 cups whole milk (480ml)
  • 1/2 cup granulated sugar (100g)
  • 3 egg yolks
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 500g fresh strawberries
  • 2 tablespoons apricot jam
  • 1 tablespoon water

Instructions

  1. Prepare and chill tart dough.
  2. Bake crust at 180°C for 20-25 minutes.
  3. Heat milk and prepare custard mixture.
  4. Cook until thick and cool.
  5. Fill crust with custard.
  6. Arrange strawberries on top.
  7. Brush with warm apricot glaze.
  8. Chill before serving.

Notes

Store refrigerated for up to 3 days. Do not freeze. Use ripe strawberries for best flavor.
