A flavorful, moist meatloaf made on the stovetop using ground beef and herb-based stuffing mix. Perfect for busy weeknights with no oven required, this American comfort food hits all the right textures and flavors.
Ingredients
1 1/2 cups ground beef (85% lean)
1/2 cup bread crumbs (gluten-free optional)
1 cup Stove Top Stuffing Mix (herb-based)
1/2 cup diced onion (or green onions)
1 large egg (substitute vegan binder if needed)
1/2 cup ketchup
1 tbsp mustard (Dijon optional)
1 tsp garlic powder
Salt and pepper to taste
Instructions
Sauté onion in electric skillet on medium heat until translucent
Let onions cool slightly before proceeding
Combine ground beef, bread crumbs, stuffing mix, cooled onions, egg, ketchup, mustard, garlic powder, salt, and pepper in a mixing bowl
Mix until just combined (do not overwork the meat)
Press mixture firmly into a 9×5-inch loaf pan for shape, or shape by hand in skillet
Cook over low heat for 50-55 minutes, adjusting temperature to maintain 200°F (93°C), and adding water as needed to keep moisture
Top with remaining ketchup for a glaze during last 10 minutes of cooking
Notes
Use an herb-based stuffing mix for maximum flavor
Adjust salt and pepper based on your specific stuffing mix brand’s sodium content
Vegan version: substitute egg with 2 tbsp ground flaxseed or chia seed mix
Serves taste best when allowed to rest 5-10 minutes before slicing
