Description

This dense, moist, and flavorful quick bread captures the essence of the iconic coffee shop treat. By utilizing overripe bananas for deep natural sweetness and adding a signature crunch of toasted walnuts, this recipe delivers a bakery-quality experience at home. Perfect for breakfast or an afternoon snack, its consistent crumb and tender texture make it a crowd-pleasing favorite that stores beautifully.

Ingredients

Scale

34 medium overripe bananas (with brown spots)
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, melted and slightly cooled
2 large eggs, room temperature
1/2 cup walnuts, chopped and lightly toasted
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pure vanilla extract

Instructions

Preheat your oven to 350 degrees Fahrenheit.
Grease a 9×5 inch loaf pan thoroughly with butter or non-stick spray.
Toast walnuts in a dry skillet over medium heat for three minutes until fragrant, then set aside.
Mash peeled bananas in a large bowl until mostly smooth but slightly chunky.
Whisk the melted butter and sugar into the banana mash until fully combined.
Beat in eggs and vanilla extract until the mixture appears uniform.
Stir in the flour, baking soda, and salt until just combined, being careful not to overmix.
Gently fold in the toasted walnuts.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Ensure your bananas are heavily spotted or even black for the best flavor. For a richer, more caramelized flavor, you can replace half of the granulated sugar with brown sugar. Store in an airtight container at room temperature for up to 3 days, or freeze slices individually for longer storage.
