- 1 teaspoon lemon zest

Instructions
- Blanch fresh peas or thaw frozen peas and pat dry.
- Place peas in a large bowl.
- Add chopped onion, mint, and parsley.
- In a small bowl, whisk olive oil, lemon juice, zest, salt, and pepper.
- Pour dressing over salad and toss gently.
- Add crumbled feta.
- Mix lightly and serve.
