Description

Ingredients

  • 3 cups fresh or frozen peas
  • 150g feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Blanch fresh peas or thaw frozen peas and pat dry.
  2. Place peas in a large bowl.
  3. Add chopped onion, mint, and parsley.
  4. In a small bowl, whisk olive oil, lemon juice, zest, salt, and pepper.
  5. Pour dressing over salad and toss gently.
  6. Add crumbled feta.
  7. Mix lightly and serve.

Notes

Use fresh herbs for best flavor. Add toasted nuts for crunch or substitute feta with goat cheese. Store in fridge up to 2 days.
