Description

Ingredients

  • 150g baby spinach
  • 200g strawberries (sliced)
  • 50g feta or goat cheese (crumbled)
  • 40g sliced almonds (toasted)
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Wash and dry spinach thoroughly.
  2. Slice strawberries.
  3. Toast almonds in a dry pan.
  4. Whisk olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper.
  5. Place spinach in a bowl.
  6. Add strawberries on top.
  7. Sprinkle cheese and almonds.
  8. Drizzle dressing.
  9. Toss gently.
  10. Serve immediately.
