Description

This spinach salad with pine nuts is fresh, light, and full of flavor. Tender spinach leaves are paired with toasted pine nuts, creamy feta, and a bright lemon-honey dressing for a perfectly balanced and healthy dish.


Ingredients

  • 4 cups baby spinach
  • 3 tablespoons pine nuts
  • 1/4 red onion (thinly sliced)
  • 1/3 cup feta cheese (crumbled)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Wash and dry the spinach thoroughly.
  2. Slice the red onion thinly.
  3. Toast pine nuts in a dry pan until golden.
  4. Whisk olive oil, lemon juice, honey, salt, and pepper.
  5. Toss spinach and onion with dressing.
