Description

Ingredients

  • 2 ripe avocados, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and dry the spinach thoroughly.
  2. Slice the avocados carefully.
  3. Thinly slice the red onion and halve the cherry tomatoes.
  4. Place spinach in a bowl and lightly toss with a bit of olive oil.
  5. Add avocado, onion, and tomatoes on top.
  6. Whisk olive oil, lemon juice, honey, salt, and pepper.
  7. Drizzle dressing over salad.
  8. Toss gently and serve immediately.
