- 1 pie crust
- 2 cups fresh spinach, chopped
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 4 large eggs
- 1 cup milk or cream
- 1/2 cup grated cheese
- Salt and pepper
- Pinch of nutmeg
Instructions
- Preheat oven to 180°C (350°F).
- Sauté onion in olive oil until soft.
- Add garlic and spinach and cook until wilted.
- Whisk eggs with milk, salt, pepper, and nutmeg.
- Place crust in a baking dish.
- Add spinach mixture and sprinkle cheese.
- Pour egg mixture over filling.
- Bake for 35–40 minutes until set and golden.
- Let cool slightly before slicing and serving.
Notes
Always cook spinach to remove excess moisture. Let the quiche rest before slicing. You can substitute different cheeses or add herbs for extra flavor.
