2 lb (900g) ground beef (80% lean for juiciness)
1/2 cup breadcrumbs (use gluten-free if needed)
1 large onion (finely chopped) or 1/2 tsp granulated garlic as substitute
1 large egg or 2 tbsp flaxseed meal + 3 tbsp water for vegan substitute
2 tbsp Worcestershire sauce (vegan if preferred)
Salt and pepper to taste
1/2 cup ketchup (glaze base)
2 tbsp apple cider vinegar (glaze)
1 tbsp brown sugar (optional, for glaze)


Instructions

Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
In a large bowl, combine ground beef, breadcrumbs, finely chopped onion (or granulated garlic), egg (or flaxseed mixture), 2 tbsp Worcestershire sauce, and season with salt and pepper. Mix thoroughly.
Press the meat mixture firmly into the pan to avoid air pockets.
Bake for 25 minutes. Meanwhile, mix glaze: combine ketchup, vinegar, and brown sugar (if using).
After 25 minutes, spoon glaze over the meatloaf and return to oven. Bake 30–35 more minutes until internal temperature reaches 160°F.
Let rest 10 minutes before slicing. Remove outer crust for cleaner presentation.
