Description

These Soft Pine Nut Cookies are buttery, tender, and delicately sweet with a light nutty crunch from toasted pine nuts. Inspired by Mediterranean baking traditions, this easy cookie recipe creates soft centers with lightly golden edges. Perfect for coffee time, holidays, or homemade gifts.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup pine nuts (plus extra for topping)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon milk (if needed)

Instructions

  1. Preheat oven to 170°C (340°F) and lightly toast pine nuts for 5 minutes. Let cool.
  2. Cream softened butter and powdered sugar until light and fluffy.
  3. Add egg and vanilla extract. Mix until smooth.
  4. In a separate bowl, combine flour, baking powder, and salt. Gradually mix into the butter mixture.
  5. Fold in toasted pine nuts gently. Add milk if dough feels dry.
  6. Shape dough into small balls and place on lined baking tray. Press extra pine nuts on top.
  7. Bake for 12–15 minutes until edges are lightly golden. Cool before serving.

Notes

Do not overbake to keep the centers soft. Store in an airtight container for up to 5 days. Dough can be refrigerated for 24 hours before baking.
