Ingredients
2 lbs Beef Chuck Roast, cut into 1-inch cubes
3 large Yukon Gold potatoes, chopped
4 whole carrots, cut into chunks
1 large onion, diced
3 cloves garlic, minced
3 cups low-sodium beef broth
2 tbsp tomato paste
1 tbsp alcohol-free Worcestershire sauce
1 tsp dried thyme
2 tbsp flour
2 tbsp olive oil
Salt and black pepper to taste
Instructions
Coat the beef cubes in a dusting of flour mixed with salt and pepper.
