Description

This nutrient-dense and savory beef stew utilizes collagen-rich chuck roast and fresh root vegetables to create a wholesome, comforting meal. By slow-cooking at a low temperature, the beef becomes fork-tender while the herbs and aromatics meld into a rich, velvety broth. Perfectly suited for a family dinner, this recipe achieves a deep, complex flavor profile without the need for constant supervision, making it a reliable staple for your kitchen repertoire.

Ingredients

Scale

2.5 lbs Beef Chuck Roast, cut into 1.5-inch cubes
4 large Gold Potatoes, diced into chunks
3 large Carrots, sliced into rounds
1 large Yellow Onion, chopped
3 cups Beef Broth (low sodium)
2 tbsp Tomato Paste
1 tbsp Worcestershire sauce (alcohol-free)
4 cloves Garlic, minced
1 tsp Dried Thyme
0.25 cup All-purpose flour
Salt and black pepper to taste
2 tbsp Vegetable oil

Instructions

Coat the beef cubes in flour seasoned with salt and black pepper until lightly dusted.
Heat oil in a skillet over medium-high heat and sear the beef cubes for two minutes per side for extra flavor.
Place the seared beef into the bottom of the slow cooker insert.
Add the chopped potatoes, carrots, and onions over the beef layer.
In a separate bowl, whisk the beef broth, tomato paste, Worcestershire sauce, and minced garlic until smooth.
Pour the liquid mixture over the beef and vegetables, ensuring the ingredients are mostly submerged.
Set the slow cooker to low for eight hours, avoiding opening the lid during the process.

Notes

Sear the beef cubes in a hot skillet with oil for two minutes per side before adding to the slow cooker for enhanced flavor. For best results, use an alcohol-free Worcestershire sauce to maintain the integrity of the dish. Store leftovers in an airtight container in the refrigerator for up to 3 days.
