Description

Fresh, healthy, and easy simple quinoa salad with vegetables, feta, and lemon dressing.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/4 cup red onion
  • 1/4 cup parsley
  • 1/4 cup feta cheese
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper

Instructions

  1. Rinse quinoa
  2. Cook quinoa
  3. Cool it
  4. Chop vegetables
  5. Mix all
  6. Add dressing
  7. Add feta
  8. Serve

Notes

Store in fridge up to 3 days. Best served cold.
