Ingredients
Scale
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes
- 1 cucumber
- 1/4 cup red onion
- 1/4 cup parsley
- 1/4 cup feta cheese
- 3 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper
Instructions
- Rinse quinoa
- Cook quinoa
- Cool it
- Chop vegetables
- Mix all
- Add dressing
- Add feta
- Serve

Store in fridge up to 3 days. Best served cold.
