Ingredients
15 oz can chickpeas, drained and rinsed
1/3 cup tahini
3 tbsp freshly squeezed lemon juice
1 clove garlic, minced
2 tbsp extra virgin olive oil
2–3 tbsp cold water
1/2 tsp salt
Instructions
Place tahini and lemon juice in a food processor and pulse for one minute until whipped and light.
Add olive oil, minced garlic, and salt to the processor and blend until well incorporated.
Add the rinsed chickpeas and process for one minute until a thick paste forms.
With the processor running, slowly add cold water one tablespoon at a time until you reach your desired creamy consistency.
Notes
