Ingredients

  • 2 zucchinis, sliced
  • 2 carrots, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 2 potatoes, cubed
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1/4 cup pine nuts
  • Fresh parsley

Instructions

  1. Preheat oven to 200°C.
  2. Prepare and chop all vegetables evenly.
  3. Mix vegetables with olive oil, garlic, oregano, salt, and pepper.
  4. Spread evenly on a baking tray.
  5. Roast for 30–40 minutes, stirring halfway.
  6. Toast pine nuts in a dry pan until golden.
  7. Remove vegetables from oven.
  8. Top with pine nuts and fresh parsley.
  9. Serve warm.
