Ingredients

- 2 cups broccoli florets
- 2 carrots, sliced
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into chunks
- 3 tbsp olive oil
- 3 garlic cloves
- 1 tsp oregano
- 1 tsp thyme
- Salt and pepper
- 1/2 cup Parmesan cheese
Instructions
- Preheat oven to 200°C
- Prepare vegetables
- Mix with oil and seasoning
- Spread on tray
- Roast 30 minutes
- Add Parmesan
- Roast 5 more minutes
- Serve warm
Notes
Use seasonal vegetables. Do not overcrowd tray. Reheat in oven for best texture.
