Ingredients

- 2 cups potatoes
- 1 zucchini
- 2 bell peppers
- 1 onion
- 4 tbsp olive oil
- 2 garlic cloves
- 1 tsp oregano
- 1 tsp thyme
- Salt
- Black pepper
Instructions
- Preheat oven to 200°C
- Cut vegetables
- Mix with oil and seasoning
- Spread on tray
- Roast 40 minutes
- Serve warm
