Ingredients

  • 2 cups carrots
  • 2 cups potatoes
  • 1 zucchini
  • 2 bell peppers
  • 1 onion
  • 4 tbsp olive oil
  • 2 garlic cloves
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt

Instructions

  2. Cut vegetables
  3. Mix with oil and seasoning
  4. Spread on tray
  5. Roast 40 minutes
  6. Serve warm
