Ingredients

- 2 cups carrots, sliced
- 2 cups zucchini, chopped
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 2 cups broccoli
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 3 cloves garlic
- 1 tsp oregano
- 1 tsp thyme
- Salt and pepper
Instructions
- Preheat oven to 200°C
- Chop vegetables
- Mix dressing
- Toss vegetables
- Spread on tray
- Roast 30 minutes
- Stir halfway
- Serve warm
