- 2 large carrots, peeled and chopped
- 2 potatoes, peeled and cubed
- 1 sweet potato, peeled and cubed
- 2 small beets, peeled and chopped
- 1 red onion, cut into wedges
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt
- Black pepper
Instructions
- Preheat oven to 200°C
- Chop vegetables evenly
- Mix with oil and seasoning
- Spread on tray
- Roast 40–45 minutes
- Stir halfway
- Serve warm
Notes
Use fresh vegetables for best flavor. Do not overcrowd the tray. Reheat in oven for crisp texture.
