Description

Roasted Chicken with Pine Nuts is a comforting dish featuring juicy roasted chicken, fragrant herbs, and crunchy toasted pine nuts. I prepare it slowly in the oven until golden and tender, creating a warm and satisfying family meal.


Ingredients

Scale
  • 1 whole chicken (about 1.5 kg)
  • 3 tbsp olive oil
  • 4 garlic cloves (minced)
  • 1 lemon (halved)
  • 2 tsp thyme
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 50g pine nuts
  • 1 onion (sliced)
  • 2 carrots (chopped)
  • 120ml chicken broth

Instructions

  1. Preheat oven to 190°C.
  2. Pat chicken dry and place in roasting dish.
  3. Rub with olive oil, garlic, and spices.
  4. Place lemon halves inside the cavity.
  5. Add onion and carrots around the chicken.
  6. Pour broth into the dish.
  7. Roast for about 1 hour 20 minutes, basting occasionally.
  8. Toast pine nuts in a dry pan.
  9. Sprinkle pine nuts over chicken in the last 10 minutes.
  10. Let rest before carving and serving.

Notes

For best flavor, marinate the chicken ahead of time. Always toast pine nuts separately to keep them crisp. Let the chicken rest before slicing to retain juices. You can add potatoes for a fuller meal.
