Description

1 cup (227g) unsalted butter (European-style)
1 cup (100g) dark cocoa powder (70%+)
1 1/2 cups (300g) packed brown sugar
2 large eggs (room temperature)
1 1/2 cups (180g) all-purpose flour
1 1/2 lbs (680g) pitted cherries
1 tsp lemon juice
1/2 tsp sea salt
1 tbsp sugar (for cherries)
2 tbsp sour cream
1 tsp vanilla extract


Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Toss pitted cherries with 1 tbsp sugar and 1 tsp lemon juice. Spread on baking sheet and roast for 20 minutes, until syrupy and reduced. Set aside to cool.
In a heatproof bowl, combine butter and dark cocoa powder. Microwave in 30-second intervals, stirring until smooth.
Whisk in sour cream and vanilla extract until glossy.
In a separate bowl, sift flour, cocoa powder, baking powder, and sea salt. Gradually add to chocolate mixture in three batches, mixing well after each addition.
Chill batter for 30 minutes to prevent over-spreading and ensure fudgy texture.
Preheat oven to 325°F (160°C). Pour half the cooled batter into a parchment-lined 9×13″ baking dish.
Spread the roasted cherry compote over the base layer. Add remaining batter and use an offset spatula to smooth the top.
Bake for 35 minutes, or until a toothpick inserted into the edge comes out fudgy but not undercooked. Let cool before slicing.

Notes

For gluten-free option, use certified gluten-free flour.
Roast cherries until they collapse and reduce in volume by about 40% for concentrated flavor.
Allow brownies to cool completely before slicing to preserve their texture and presentation.
