Ingredients
Ritz Cracker Biscuit Crumbs (1 box)
Raw Chicken Breasts (2, 6-oz each) or pre-cooked rotisserie chicken
Cream of Mushroom Soup (1 (10.5-oz) can)
Jasmine Rice (1 cup uncooked)
Instructions
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish
Whisk cream of mushroom soup, 1 tsp garlic powder, and 1/2 cup water until smooth
Add uncooked jasmine rice and stir to coat the grains
Spread the rice-soup mixture evenly in the greased pan
Cover with aluminum foil, then bake at 325°F (160°C) for 15 minutes
While base bakes, cook chicken separately (bake, sauté, or boil until fully cooked)
Once base is done, flake cooked chicken over the rice mixture
In a bowl, mix Ritz crumbs with 1/4 cup softened butter until crumbly
Sprinkle the crumb mixture over the casserole
Remove foil and bake 10-15 minutes to crisp the topping
Notes
Use gluten-free Ritz for GF version
Replace soup with non-alcoholic mushroom broth if needed
Drain vegetables briefly before adding to avoid a watery casserole
Toothpick test works best for checking rice doneness
