Ingredients
1.5 lbs boneless skinless chicken breast, sliced into thin strips
12 oz penne, rigatoni, or fettuccine
1/2 cup sun-dried tomatoes packed in oil, finely chopped
1.5 cups heavy cream
3/4 cup freshly grated parmesan cheese
4 cloves garlic, minced
1/2 cup low-sodium chicken broth
1 tbsp Italian seasoning
2 tbsp olive oil (reserved from sun-dried tomato jar)
Instructions
Bring a large pot of salted water to a boil and cook pasta according to package directions for al dente texture. Drain and set aside.
In a large skillet over medium-high heat, add the olive oil from the sun-dried tomato jar.
Add the chicken strips to the skillet, seasoning with salt and pepper to taste, and sear until golden brown and cooked through. Remove chicken from the pan and set aside.
In the same skillet, add the minced garlic and chopped sun-dried tomatoes, sautéing for 1-2 minutes until fragrant.
