Description

This Rice Pilaf with Raisins is fluffy, fragrant, and beautifully balanced with savory onions, warm spices, and sweet golden raisins. A comforting Mediterranean side dish perfect for family dinners or special gatherings.


Ingredients

  • 1 1/2 cups long-grain white rice
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 1/4 cups vegetable or chicken broth
  • 1/2 cup golden raisins
  • 2 tablespoons butter
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped parsley

Instructions

  1. Rinse rice under cold water until clear.
  2. Heat olive oil and sauté onion until soft.
  3. Add garlic and cook for 30 seconds.
  4. Add rice and toast for 2–3 minutes.
  5. Pour in broth, raisins, and spices. Bring to a boil.
  6. Reduce heat, cover, and simmer for 15–18 minutes.
  7. Rest 10 minutes, fluff with butter, garnish, and serve.

Notes

Soak raisins in warm water before adding for extra plump texture. Do not lift the lid while cooking. Store in an airtight container for up to 4 days and reheat with a splash of water.
