Ingredients
- 1 cup long-grain white rice
- 2 tablespoons olive oil or butter
- 1/4 cup pine nuts
- 1 small onion, finely chopped
- 2 cups warm vegetable or chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh lemon juice (optional)
Instructions
- Toast pine nuts in a dry pan over medium heat for 2–3 minutes until golden. Remove and set aside.
- Heat olive oil in the same pan and sauté chopped onion until soft and translucent.
- Add rinsed rice and stir for 2–3 minutes to lightly toast.
- Pour in warm broth, add salt and pepper, and bring to a gentle simmer.
- Cover and cook on low heat for 15 minutes without stirring.
- Turn off heat and let rest covered for 10 minutes.
- Fluff with a fork and stir in toasted pine nuts, parsley, and lemon juice before serving.
