Description

This quinoa salad with pine nuts is a fresh, nourishing Mediterranean dish made with fluffy quinoa, crisp vegetables, fresh herbs, and a bright lemon dressing, finished with toasted pine nuts for a rich, nutty crunch.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/3 cup pine nuts
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa thoroughly.
  2. Cook quinoa in boiling water for 15 minutes.
  3. Let quinoa cool and fluff with a fork.
  4. Toast pine nuts until golden.
  5. Chop all vegetables and herbs.
  6. Combine quinoa and vegetables.
  7. Whisk dressing ingredients.
  8. Toss salad with dressing.
  9. Top with pine nuts and serve.

Notes

Add feta or olives for extra flavor. Store in fridge up to 3 days. Refresh with lemon juice before serving.
