- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, chopped
- 1/2 cup olives
- 3/4 cup feta cheese
- 1/4 cup parsley
- 2 tbsp mint
- 3 tbsp olive oil
- 2 tbsp lemon juice

Instructions
