Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, chopped
  • 1/2 cup olives
  • 3/4 cup feta cheese
  • 1/4 cup parsley
  • 2 tbsp mint
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper

Instructions

  1. Rinse quinoa thoroughly.
  2. Cook quinoa in water for 15 minutes.
  3. Let quinoa cool.
  4. Chop vegetables.
  5. Mix quinoa and vegetables.
  6. Prepare dressing.
  7. Toss everything together.
  8. Add feta and herbs.
  9. Serve fresh.

Notes

Store in the fridge for up to 3 days. Add feta before serving for best texture. Adjust lemon and salt to taste. Add chickpeas or grilled chicken if desired.
