Description

This fresh quinoa salad with avocado is light, healthy, and full of vibrant Mediterranean flavors. It combines fluffy quinoa, creamy avocado, crisp vegetables, and a bright lemon dressing for a nourishing and satisfying meal.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse quinoa thoroughly under cold water.
  2. Bring water to a boil and add quinoa.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it cool completely.
  5. Combine quinoa with tomatoes, cucumber, and onion.
  6. Add parsley, olive oil, and lemon juice.
  7. Season with salt and pepper.
  8. Gently fold in avocado and serve.

Notes

Always let quinoa cool before mixing. Add avocado last to keep it fresh. You can add feta cheese or grilled chicken for variation.
