Ingredients

- 1 cup quinoa
- 2 cups water
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt to taste
- Black pepper to taste
Instructions
- Rinse quinoa thoroughly under cold water.
- Bring water to a boil and add quinoa.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it cool completely.
- Combine quinoa with tomatoes, cucumber, and onion.
- Add parsley, olive oil, and lemon juice.
- Season with salt and pepper.
- Gently fold in avocado and serve.
Notes
Always let quinoa cool before mixing. Add avocado last to keep it fresh. You can add feta cheese or grilled chicken for variation.
