Description

Experience the ultimate holiday treat with this indulgent Pumpkin Cheesecake Pie. By marrying a smooth, velvety New York-style cheesecake layer with a spiced pumpkin custard, this dual-layered dessert offers a sophisticated texture and flavor profile. The pre-baked graham cracker crust ensures a crisp foundation that perfectly complements the rich, dense filling. It is a stunning, crowd-pleasing centerpiece that simplifies holiday baking by combining two classic favorites into one elegant, easy-to-slice dish.

Ingredients

Scale

16 oz cream cheese, softened to room temperature
1 cup pure pumpkin purée
3/4 cup granulated sugar, divided
3 large eggs, room temperature
1 standard 9-inch graham cracker crust
1 tbsp pumpkin pie spice
1 tsp pure vanilla extract

Instructions

Preheat your oven to 350°F.
Blind-bake the graham cracker crust for 8 minutes and remove from the oven.
In a large bowl, beat the softened cream cheese and half of the granulated sugar until the mixture is completely smooth.
Incorporate one egg and the vanilla extract into the cream cheese mixture, mixing until just combined.
In a separate bowl, whisk together the pumpkin purée, remaining sugar, pumpkin pie spice, and the two remaining eggs.
Pour the cream cheese mixture into the pre-baked crust, smoothing the top.
Slowly pour the pumpkin mixture over the back of a spoon onto the cream cheese layer to keep them distinct.
Bake until the center is set and the edges are firm, approximately 55 minutes.
Allow to cool completely and refrigerate for at least 3 hours before serving.

Notes

Ensure the cream cheese is at room temperature to avoid lumps in the filling. Do not overmix after adding the eggs to prevent air bubbles from forming, which can cause cracks. Always use pure pumpkin purée, not pre-spiced pumpkin pie filling.
