Ingredients
1 cup 100% pure pumpkin puree
2 cups all-purpose flour
1 cup granulated sugar
8 ounces cream cheese, softened
2 teaspoons pumpkin pie spice
1/2 cup vegetable oil
2 large eggs
1 teaspoon baking powder
1/2 teaspoon salt
1 cup powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat oven to 350 degrees Fahrenheit.
Grease a 9×5 inch loaf pan thoroughly.
Whisk together flour, baking powder, pumpkin spice, and salt in a large bowl.
In a separate bowl, combine sugar, pumpkin puree, oil, and eggs until smooth.
Fold the wet ingredients into the dry ingredients until just combined.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 55 to 60 minutes until a toothpick inserted comes out clean.
Cool in the pan for ten minutes, then transfer to a wire rack to cool completely.
Beat cream cheese, powdered sugar, and vanilla extract until fluffy using an electric mixer.
Spread the frosting generously over the completely cooled loaf.
Notes
Ensure the loaf is completely cool before frosting to prevent melting. Measure flour by spooning it into the measuring cup rather than scooping directly to avoid a dense crumb. Store the bread in an airtight container in the refrigerator due to the cream cheese frosting.
