- 1 sheet puff pastry, thawed
- 2 cups fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup cream cheese
- 1/4 cup grated mozzarella
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1 egg (for egg wash)
Instructions
- Preheat oven to 375°F (190°C) and line a baking tray.
- Cook onion in olive oil until soft.
- Add garlic and spinach, cook until wilted.
- Cool and squeeze out excess liquid.
- Mix spinach with cheeses and seasoning.
- Cut puff pastry into squares.
- Add filling to each square.
- Fold and seal edges.
- Brush with egg wash.
- Bake 15–20 minutes until golden and puffed.
Notes
Always remove excess moisture from spinach to keep pastry crispy. Do not overfill. You can add mushrooms or herbs for variation. Store in fridge up to 3 days and reheat in oven.
